This version of Tomasu sambal is the first we’ve made using our homegrown peppers. After brewing our sweet and spicy soy sauce, we let the residue mature for six months, creating a unique sambal. The selected variety turned out to be very resilient, with peppers that tasted and smelled fantastic. But most of all, it’s incredibly satisfying to work with peppers we’ve grown ourselves.
