For this special edition, we started with our signature soy sauce and sweetened it with honey from our own bees. Harvested, extracted from the comb, spun, sieved and clarified by hand. Like our Sweet Spicy Soy, we infused it with sesame seeds and Madame Jeanette peppers, first gently smoked on our Big Green Egg to add aroma and depth. The infusion takes six months, letting sweetness and heat slowly blend into the sauce. Sweet from honey. Heat from pepper. Depth from smoke. All built on time.
