Every year, wild garlic reminds us that spring has arrived; fresh, fragrant, and only here for a short moment. We’ve learned to pay attention, go out quickly and pick the leaves ourselves. There’s something about picking it yourself, everything that follows automatically feels more meaningful. We were curious what would happen if we let wild garlic rest with our soy sauce. So we did. It has been slowly developing in our barrel for a year, with a second addition of fresh leaves to bring back a bit of spring. From this experiment came two products: Wild Garlic Soy and Wild Garlic Salt. We didn’t plan it, but the leaves still had so much flavor to give. A seasonal release, available for a short time only, as it should be. And if you miss it this year, there’s a good chance it will return next spring.
