This bottle of soy is an experiment and is made by using own grown peppers. And not just your average peppers! The relentless search for flavour brought us to the pepper collection of the Centre for Genetic Resources, The Netherlands (CGN) who kindly provided us with multiple varieties. The resideu resulted in this version of Tomasu Sambal. The first we’ve made using our homegrown peppers. After brewing our sweet and spicy soy sauce, we let the residue mature for six months, creating a unique sambal. The selected variety turned out to be very resilient, with peppers that tasted and smelled fantastic. But most of all, it’s incredibly satisfying to work with peppers we’ve grown ourselves.
